Pea Purée

Ingredients

  • 1/2 cup unsalted butter
  • 3 garlic cloves chopped
  • 2 shallots diced
  • 2 pounds frozen peas
  • 1 2/3 cups vegetable stock low-sodium
  • 1/4 cup fresh mint leaves optional
  • 1/4 teaspoon salt
  • 2 pinches white pepper
  • water as needed

Instructions

  1. Melt butter in a saucepan over medium heat. Add garlic and shallots, sauté for 3 minutes until soft without browning.
  2. Add frozen peas and vegetable stock, increase heat to bring to a simmer, then cover and reduce heat to medium. Simmer for 5 minutes.
  3. Transfer peas and remaining liquid to a food processor. Add salt, pepper, and mint if using. Blitz until smooth.
  4. If desired, gradually add water to thin the mixture to your preferred consistency. Add more salt and pepper if desired.
  5. Serve warm as a side dish.
