Peach Bellini Recipe
The Peach Bellini Recipe blends frozen peaches with prosecco, lime juice, and sugar into a smooth, refreshing sparkling cocktail. Ingredients
- 20 oz. peaches about 4 cups, frozen
- 750 ml prosecco or other sparkling wine, chilled, bottle
- 1 tsp. lime juice freshly squeezed
- 2 tsp. sugar or honey
Instructions
- Add all ingredients to a large high-speed blender, such as a Vitamix, or to a 10 to 14-cup food processor.
- Blend for 1-2 minutes, or until completely smooth.
- Serve immediately in a champagne flute with a sprig of mint and enjoy!
Notes
- Prepare peaches by peeling, slicing, and freezing at least one day prior to blending if freezing yourself.
- Consume the Bellini immediately after blending for best texture; it melts quickly.
- Extra portions can be stored briefly in a sealed container in the freezer but will freeze solid if left too long.
