Peach Blueberry Dutch Baby Oven Pancakes

Ingredients

  • 3 eggs
  • ½ cup whole milk
  • ½ cup flour
  • ¼ tsp sea salt
  • 1 tbsp sugar
  • ½ tsp vanilla extract
  • 4 oz salted butter
  • 1 peach diced into small 1/4" bites
  • ¼ cup blueberries

Instructions

  1. Preheat oven to 400 degrees, add the cast iron skillet to the oven so it can preheat with the oven.
  2. In a blender combine the eggs, milk, flour, salt, sugar, and vanilla extract.
  3. Add the butter to the hot cast iron skillet.
  4. Melt the butter in the pan and swish it around the pan to coat all sides.
  5. Add the sliced peaches and blueberries to the pan.
  6. Pour the Dutch baby batter from the blender into the hot butter in the pan.
  7. Bake immediately for 12 - 15 minutes until golden brown and very puffy.
