Peach Caprese Salad Recipe

This easy peach Caprese salad takes the classic to a new level with juicy summer peaches. It's a refreshing, no-cook dish perfect for hot nights - and it's gorgeous too!

Ingredients

  • ¼ cup red onion
  • 4 peaches
  • 3 cups cherry tomatoes
  • 1 cup mozzarella balls
  • ¼ cup basil
  • salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil

Instructions

  1. Slice the peaches.
  2. Scatter the slices on a plate and top with the tomatoes and mozzarella balls.
  3. Scatter on the basil, red onion and sprinkle with salt and pepper to taste.
  4. Drizzle with olive oil and balsamic vinegar.

Notes

  • Overripe peaches may be too soft and mushy, while underripe peaches may be too hard and lacking in flavor. When gently squeezed, a perfectly ripe peach should have a little give but shouldn't feel too soft or mushy.
  • While fresh mozzarella balls are the traditional choice for a caprese salad, you can experiment with different types of mozzarella. Burrata, a creamier and more delicate mozzarella, can add a luxurious texture to the salad. Smoked mozzarella also pairs well with the sweetness of the peaches.
  • Try adding some sliced prosciutto for a salty, savory twist. Or mix in some fresh mint or basil leaves for an extra burst of herbal flavor.
