Ingredients
- ¼ cup red onion
- 4 peaches
- 3 cups cherry tomatoes
- 1 cup mozzarella balls
- ¼ cup basil
- salt and pepper to taste
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
Instructions
- Slice the peaches.
- Scatter the slices on a plate and top with the tomatoes and mozzarella balls.
- Scatter on the basil, red onion and sprinkle with salt and pepper to taste.
- Drizzle with olive oil and balsamic vinegar.
Notes
- Overripe peaches may be too soft and mushy, while underripe peaches may be too hard and lacking in flavor. When gently squeezed, a perfectly ripe peach should have a little give but shouldn't feel too soft or mushy.
- While fresh mozzarella balls are the traditional choice for a caprese salad, you can experiment with different types of mozzarella. Burrata, a creamier and more delicate mozzarella, can add a luxurious texture to the salad. Smoked mozzarella also pairs well with the sweetness of the peaches.
- Try adding some sliced prosciutto for a salty, savory twist. Or mix in some fresh mint or basil leaves for an extra burst of herbal flavor.
