Peach Caprese Skewers Recipe

Ingredients

  • ¼ cup red onion
  • 4 peaches
  • 3 cups cherry tomatoes
  • 1 cup mozzarella balls
  • ¼ cup basil
  • salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil

Instructions

  1. Slice the peaches. Make the chucks about ½ wide so they fit nicely on the skewers.
  2. Thread the skewers with tomatoes, mozzarella balls, peach slices, basil, and red onions.
  3. Set the skewers on a serving platter. Sprinkle them with salt and pepper to taste.
  4. Drizzle with olive oil and balsamic vinegar.

Notes

  • You want peaches that are ripe but still slightly firm. If they're too soft, they'll fall apart on the skewers. Look for peaches that have a little give when gently squeezed but aren't mushy. If your peaches are underripe, pop them in a paper bag for a day or two to speed up the ripening process.
  • Add some prosciutto or salami for a salty kick.
