Ingredients
- ¼ cup red onion
- 4 peaches
- 3 cups cherry tomatoes
- 1 cup mozzarella balls
- ¼ cup basil
- salt and pepper to taste
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
Instructions
- Slice the peaches. Make the chucks about ½ wide so they fit nicely on the skewers.
- Thread the skewers with tomatoes, mozzarella balls, peach slices, basil, and red onions.
- Set the skewers on a serving platter. Sprinkle them with salt and pepper to taste.
- Drizzle with olive oil and balsamic vinegar.
Notes
- You want peaches that are ripe but still slightly firm. If they're too soft, they'll fall apart on the skewers. Look for peaches that have a little give when gently squeezed but aren't mushy. If your peaches are underripe, pop them in a paper bag for a day or two to speed up the ripening process.
- Add some prosciutto or salami for a salty kick.
