Peach Chipotle BBQ Baked Beans

Baked beans are a staple at any cookout. If you’re looking for a go-to barbecue baked beans recipe this is it. It’s smoky, spicy from the chipotle and sweet from the fresh chopped peaches. Ingredients

  • 16 oz Navy beans
  • 8 cups of water
  • salt and pepper
  • 2 slices of bacon
  • 1 large onion chopped
  • 1 green pepper chopped
  • 2 peaches chopped
  • 3 chipotle peppers minced
  • 1 tablespoon minced garlic 
  • 1 cup your favorite barbecue sauce
  • ½ cup tomato sauce
  • ⅓ cup cider vinegar
  • ¼ cup molasses
  • ¼ cup brown sugar
  • 1 cup water

Instructions

  1. Add 1lb of navy beans and 8 cups of water to the instant pot, salt and pepper to taste. Cover and turn the knob to the seal position and cook on high for 10 minutes followed by a quick release
  2. When the beans are done drain the water and rinse them with cold water and set aside
  3. Turn your instant pot on to the sauté setting and cook the bacon until crispy, set aside. When it’s cooled, chop and save until the end.
  4. While still on the sauté setting, add the onion, green pepper, and garlic and cook for about a minute or so until fragrant. Add the beans and the remaining ingredients to the pot. Stir well and pressure cook for 15 minutes followed by a 10 minute natural release. When done, place the bacon on top and serve warm.
