Peach Clafoutis

Peach Clafoutis is a baked French dessert featuring fresh peach halves covered in a smooth batter of eggs, sugar, milk, all-purpose and almond flours, and flavored with vanilla and salt. Ingredients

  • 6 peaches halved and pit removed
  • 3 egg large
  • ⅓ cup granulated sugar
  • 1 cup milk whole
  • ¼ cup all-purpose flour
  • ¼ cup almond flour fine
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt sea salt
  • 2 tablespoons almond slivered
  • butter to grease the pan, unsalted
  • powdered sugar for dusting

  1. Preheat the oven to 375℉ and position your rack in the middle of the range.
  2. Using your unsalted butter, generously coat your 10-inch cast iron or gratin dish with the butter and set aside.
  3. Whisk the eggs with the sugar in a medium bowl of your KitchenAid stand mixer.Add the milk, and slowly add flour, vanilla, and salt. Whisk to combine well, and no lumps form in the batter.
  4. Arrange the peach halves in a single layer in the pan or gratin dish.
  5. Pour the batter evenly around the peaches, then sprinkle with the almond slivers.
  6. Bake the clafoutis until it puffs up and is lightly golden brown around the edges. It takes around 30 to 35 minutes.
  7. Place the skillet on a wire rack and let it cool off for about 10 minutes.
  8. Serve warm or at room temperature. Dust powdered sugar over the peaches and serve.

Notes

  • Fruit variations include apricots, nectarines, plums, or berries to customize the clafoutis.
  • Store leftovers in a sealed glass container once fully cooled; consume within two days.
  • Reheat or serve at room temperature for best texture.
  • Optionally add a splash of bourbon to the batter or serve with vanilla ice cream.
  • Brown sugar may replace granulated sugar for a deeper sweetness.
