Peach Clafoutis is a baked French dessert featuring fresh peach halves covered in a smooth batter of eggs, sugar, milk, all-purpose and almond flours, and flavored with vanilla and salt. The clafoutis puffs and sets with a lightly golden crust and is garnished with almond slivers and powdered sugar. It offers a tender, custard-like texture with the sweetness of peaches.

Description

Peach Clafoutis begins by greasing a 10-inch cast iron or gratin dish and arranging halved, pitted peaches in a single layer. A batter made from whisked eggs, sugar, milk, combined with flours, vanilla extract, and sea salt is poured over the fruit. Almond flour adds subtle nutty flavor and a delicate crumb.

Baked at 375°F for 30 to 35 minutes, the clafoutis puffs up and develops a light golden edge while setting softly in the center. Slivered almonds sprinkled on top toast slightly during baking and add crunch.

It can be served warm or at room temperature, dusted with powdered sugar. The dessert adapts well with other stone fruits like apricots or plums, or berries. It can be accompanied by a scoop of vanilla ice cream or a splash of bourbon (not recommended for children).

Leftovers keep for a couple of days in a sealed container after cooling. Bringing the clafoutis back to room temperature before serving helps restore texture.

  • 6 peaches halved and pit removed
  • 3 egg large
  • cup granulated sugar
  • 1 cup milk whole
  • ¼ cup all-purpose flour
  • ¼ cup almond flour fine
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt sea salt
  • 2 tablespoons almond slivered
  • butter to grease the pan, unsalted
  • powdered sugar for dusting

Instructions

  1. Preheat the oven to 375℉ and position your rack in the middle of the range.
  2. Using your unsalted butter, generously coat your 10-inch cast iron or gratin dish with the butter and set aside.
  3. Whisk the eggs with the sugar in a medium bowl of your KitchenAid stand mixer.Add the milk, and slowly add flour, vanilla, and salt. Whisk to combine well, and no lumps form in the batter.
  4. Arrange the peach halves in a single layer in the pan or gratin dish.
  5. Pour the batter evenly around the peaches, then sprinkle with the almond slivers.
  6. Bake the clafoutis until it puffs up and is lightly golden brown around the edges. It takes around 30 to 35 minutes.
  7. Place the skillet on a wire rack and let it cool off for about 10 minutes.
  8. Serve warm or at room temperature. Dust powdered sugar over the peaches and serve.
