Ingredients

  • 6 cups peach peeled and sliced, fresh
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract pure
  • 1/2 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup light brown sugar packed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter melted, unsalted

Instructions

  1. Preheat oven to 375°F. In a large mixing bowl, combine sliced peaches, granulated sugar, lemon juice, vanilla extract, and cinnamon. Toss gently and pour into a greased 9-inch baking dish.
  2. In a separate bowl, mix together flour, oats, brown sugar, baking powder, and salt. Add melted butter and stir until the mixture resembles coarse crumbs.
  3. Sprinkle the crumb mixture evenly over the peaches in the baking dish. Bake for 45 minutes, or until the topping is golden brown and the peach filling is bubbling.
  4. Remove from oven and let cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
