Peach lassi

Lassi is a common Indian drink, often made with mango but peach is also refreshing and delicious.

Ingredients

  • 1 peach ripe
  • ¾ cup PLAIN yogurt 180ml
  • 4 Ice cubes approx
  • 4 mint leaves
  • 1 dash cinnamon
  • 1 teaspoon honey optional, or a little more to taste

Instructions

  1. Stone the peach and skin if your blender is not likely to break it up fully. I prefer to leave on if possible for color (plus it's easier)
  2. Put the peach, yogurt, ice cubes, mint leaves and cinnamon in a blender and blend until well mixed and smooth. If you prefer a little sweeter, add honey to taste, blending it in.
  3. Serve immediately while nice and cold.
