Ingredients
Peaches
- 1 ½ water cold, 6 cups
- 450 gms caster sugar superfine sugar, 2 cups
- ½ vanilla pod split open lengthwise
- lemon peel thinly peeled rind of 2/3 of a lemon
- 6 peaches just ripe
Raspberry Coulis
- 250 gms raspberry fresh or frozen, 9 oz
- orange juice juice of 1 orange
- lemon juice of ½ lemon
- 2 tbsp caster sugar superfine sugar
To Assemble
- Above peaches
- Above raspberry coulis
- 1 vanilla ice cream 4 cups
- 40 gms almond toasted, flaked, 3 tbsp
- icing sugar optional, for dusting

Notes
- I make the peaches the previous day so they soak up the syrup and are nice and chilled when I serve them.
- After poaching the peaches, don’t discard the syrup in which you poached them. After finishing the peaches, put the syrup back on the fire and simmer until it reduces by half. Use this syrup to top ice cream, pancakes and cakes.
