Peach Pizza with Goat Cheese and Honey

This pizza recipe is perfect for a summer meal when you want to enjoy all the fresh summer tastes you can handle! It is filled with delicious flavors like goat cheese, thyme, honey, and, of course, grilled peaches.

Ingredients

  • 16 oz frozen pizza dough thawed
  • 1 tbsp olive oil
  • 4 oz goat cheese
  • 2 peaches ripe
  • 2-3 tsp honey
  • 2 tsp fresh thyme or more to taste

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Line a cookie sheet with parchment paper. Press the 16 oz thawed pizza dough into a rectangle shape on the parchment paper, about ⅛” thick.
  3. Brush the crust with 1 tbsp olive oil.
  4. Use your hands to crumble the 4 oz goat cheese on top of the bread.
  5. Put the cookie sheet in the oven and bake for 15 minutes, or until the dough is baked all the way through.
  6. While the dough is baking, cut the 2-3 peaches into slices. Place each peach slice on an ungreased electric griddle (you can also use a barbecue grill) and grill until char marks form on the flesh of the peaches.
  7. When the flatbread comes out of the oven, top it with the grilled peaches and 2 tsp fresh thyme. Then drizzle 2-3 tsp honey over the entire flatbread.
  8. Slice and enjoy!

  • I use plain flavored goat cheese. If you want to experiment, you can use other flavors instead
  • Use peaches that are just getting to their juicy stage but aren’t overly ripe. Do not peel the peaches.
  • Use flavored goat cheese if you want to experiment with the flavors of this Peach and Goat Cheese Flatbread
  • You can also grill the peaches on an outdoor barbecue grill if you have one available to you 
  • Other stone fruits will work in this recipe if you want to try them out, specifically nectarines
  • If you want a more traditional summer herb, basil would be a great substitution for thyme in this recipe
  • If you don’t want too large of a flatbread, you can always divide the dough in half and make two identical flatbreads that are each a bit smaller
  • If you want to stay away from too sweet of an appetizer, you can instead top the flatbread with balsamic glaze (as opposed to honey) 
  • Serve this with a side salad for a full meal. I’d recommend this
