Ingredients

  • 1 ½ lbs. peaches pitted and diced into ½-inch pieces
  • 1-2 jalapeños seeds removed, finely diced
  • 1 cup red bell pepper diced
  • ½ cup red onion diced
  • 1 lime juice
  • 3 Tbsp. cilantro finely chopped
  • 1 Tbsp. mint finely chopped
  • ½ tsp. salt to taste
  • ¼ tsp. black pepper

Instructions

    Cup of Yum
  1. Combine all ingredients in a large bowl. Toss until combined.
  2. Serve immediately over chicken, fish, pork or with tortilla chips or store in the refrigerator for up to 2-3 days. Enjoy!

Notes

  • *Be sure to combine the cut peaches with the citrus juice within 30 minutes to prevent browning.
  • How to prep ahead of time: You can chop the peaches, onion, and peppers up to 1 to 2 days beforehand, simply keep them in the fridge until you’re ready to use them. Or, prepare this salsa the day before to let the flavors marry.
  • How to store: Keep this dish tightly covered in the fridge for up to 2 to 3 days. Any longer and the mangos will begin to break down and the salsa will be somewhat watery.
  • How to freeze: Freezing will affect the texture of the salsa, but you can keep it in a freezer-safe container for up to 2 to 3 months.
