Peach Thyme Syrup

A sweet, herbal syrup made with fresh summer peaches. It's perfect for adding to sparkling water, lemonade, or iced tea!

Ingredients

  • 3 large peaches pitted and diced (mine were about 20 ounces before dicing)
  • ½ cup white sugar (organic for vegan-friendly)
  • A few sprigs of thyme

Instructions

    Cup of Yum
  1. Combine all the ingredients in a large saucepan. Bring to a boil, then reduce heat to low and cook for 30 minutes.
  2. Every few minutes, stir the pot with a wooden spoon and use it to smash the peaches a little bit.
  3. Strain the syrup into a bowl using a fine mesh sieve and discard the solids.
  4. Transfer the syrup to a bottle or jar and refrigerate for up to a week.
