Peaches and Cream Baked Oatmeal Cups

Peaches and Cream Baked Oatmeal Cups combine rolled oats, diced peaches, and a mixture of milk, cream, applesauce, and honey to create individual baked servings. Lightly spiced with cinnamon and leavened with baking powder, they provide a tender, moist texture with bursts of fresh peach flavor and a creamy finish.

Ingredients

  • 2 ½ cups rolled oats old fashioned
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 2 egg large
  • ¾ cup milk
  • ½ cup cream plus more for drizzling
  • ½ cup applesauce
  • ¼ cup honey
  • 2 teaspoons vanilla extract
  • 2 to 3 peach diced (I don’t peel mine

Instructions

  1. Preheat the oven to 350 degrees F. Spray a muffin tin with nonstick baking spray.
  2. In a small bowl, whisk together the oats, baking powder, cinnamon and salt.
  3. In a large bowl, whisk together the eggs, milk, cream, applesauce and honey. Whisk in the vanilla extract.
  4. Stir the dry ingredients into the wet ingredients until just combined. Stir in the diced peaches. Divide the mixture evenly between the 12 muffin tins.
  5. Bake for 25 minutes, or until set and golden. Remove and serve with a drizzle of cream, nuts (like almonds or pecans) and more honey if desired.
