Peaches and Cream Baked Oatmeal Cups

We love these baked peaches and cream oatmeal cups! They taste as good as the instant oatmeal I loved as a kid. Make these ahead of time meal prep - they are wonderful for breakfast or a snack!

Ingredients

  • 2 ½ cups old fashioned rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 2 large eggs
  • ¾ cup milk
  • ½ cup cream, plus more for drizzling
  • ½ cup applesauce
  • ¼ cup honey
  • 2 teaspoons vanilla extract
  • 2 to 3 peaches, diced (I don’t peel mine)

  1. Preheat the oven to 350 degrees F. Spray a muffin tin with nonstick baking spray.
  2. In a small bowl, whisk together the oats, baking powder, cinnamon and salt.
  3. In a large bowl, whisk together the eggs, milk, cream, applesauce and honey. Whisk in the vanilla extract.
  4. Stir the dry ingredients into the wet ingredients until just combined. Stir in the diced peaches. Divide the mixture evenly between the 12 muffin tins.
  5. Bake for 25 minutes, or until set and golden. Remove and serve with a drizzle of cream, nuts (like almonds or pecans) and more honey if desired.
