Ingredients

  • 3 pounds pork loin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 cup pineapple passionfruit preserves
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce low-sodium
  • 2 cloves garlic , minced
  • 1/2 teaspoon red pepper flakes crushed
  • sesame seeds optional, for garnish

Instructions

  1. Preheat oven to 375 degrees and spray a baking dish with vegetable oil spray.
  2. Score the top of the pork loin in x's.
  3. Place pork in a baking dish.
  4. In a small bowl whisk together pineapple-passionfruit preserves, peanut butter, soy sauce, garlic, and red pepper flakes.
  5. Evenly spread sauce over pork loin.
  6. Cook the pork for 60-75 minutes or until it has reached a temperature of 150-160 degrees.
  7. Remove from the oven and let rest for five minutes before serving.
  8. Top with sesame seeds for garnish, if desired.
