Peanut Butter and Oatmeal Chocolate Chip Cookies

These Peanut Butter Oatmeal Chocolate Chip Cookies are loaded with oatmeal, peanut butter and chocolate chips making them super yummy and somewhat healthy.

Ingredients

  • 2 cups rolled oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon ground
  • ¼ teaspoon salt
  • 1 cup butter at room temperature
  • 1 cup peanut butter
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips or more

Instructions

  1. Preheat oven to 350℉.
  2. In the bowl of your mixer, add butter, peanut butter, sugar and brown sugar and mix until smooth.Add the eggs and vanilla extract and continue mixing.
  3. In a large bowl, combine the flour, oats, baking soda, cinnamon and salt.
  4. Add the flour mixture to the mixing bowl and mix only until everything is well incorporated.
  5. Add the chocolate chips and stir in with a wooden spoon or spatula.
  6. Chill the dough for a couple hours.
  7. Form into 1 inch balls, and flatten with the palm of your hand.
  8. Bake for 13-15 minutes.
  9. This recipes yields about 50 cookies
