Peanut Butter Banana Baked Oatmeal
This Peanut Butter Banana Baked Oatmeal combines rolled oats with ripe bananas, peanut butter, and almond milk for a hearty breakfast baked to a golden top. Cinnamon and vanilla add warm aroma, while the flaxseed contributes texture and nutrition. The final dish is comforting and moist, topped with fresh banana slices and optionally extra peanut butter.
Ingredients
- 2 cups rolled oats old fashioned
- ¼ cup pure maple syrup
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon salt sea salt
- 2 cups almond milk unsweetened
- 1 Tablespoon Flaxseed ground
- ¼ cup peanut butter plus more for serving, natural
- 2 teaspoons vanilla extract pure
- 3 banana divided, ripe, sliced

Instructions
- Preheat the oven to 375°F.
- Spray an 8-inch square baking dish with cooking spray.
- In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- Add in the milk, maple syrup, flaxseed, peanut butter, vanilla and 2 sliced bananas. Stir well to combine.
- Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices.
- Bake for 30 to 35 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle additional peanut butter on top and serve with fresh banana slices.
Notes
- Keep leftovers refrigerated in an airtight container for up to 4 days.
- Reheat the whole dish covered with foil at 350°F for about 20 minutes for best results.
- Individual portions can be reheated in a toaster oven at 350°F for 5-10 minutes or microwaved for 1 minute.
