Peanut Butter Banana Baked Oatmeal
Description
This recipe starts by mixing rolled oats with baking powder, cinnamon, and salt, then combines these dry ingredients with almond milk, maple syrup, ground flaxseed, natural peanut butter, vanilla, and sliced bananas. The mixture is baked in an oiled dish at 375°F until the surface is golden and set, producing a soft yet structured texture with noticeable banana slices on top.
The baked oatmeal offers a filling and balanced breakfast that pairs the creaminess and nuttiness of peanut butter with the natural sweetness of bananas and maple syrup. The flaxseed adds a slight graininess and fiber, enriching the nutritional profile.
Letting the baked oatmeal cool slightly before serving improves slicing ability and flavor melding. Additional peanut butter and fresh banana slices can be added on serving for extra richness and freshness.
Store leftovers in a sealed container in the refrigerator for up to four days. To reheat, cover the whole dish with foil and warm in a 350°F oven for about 20 minutes, or heat individual servings in a toaster oven or microwave.
