Peanut Butter Banana Baked Oatmeal

This delicious peanut butter banana baked oatmeal features is easy to prep and makes a great family-friendly breakfast.

Ingredients

  • 2 cups old fashioned rolled oats
  • ¼ cup pure maple syrup
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • 2 cups unsweetened almond milk
  • 1 Tablespoon ground flaxseed
  • ¼ cup natural peanut butter plus more for serving
  • 2 teaspoons pure vanilla extract
  • 3 ripe sliced bananas divided
  • cooking spray

Instructions

  1. Preheat the oven to 375°F.
  2. Spray an 8-inch square baking dish with cooking spray.
  3. In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
  4. Add in the milk, maple syrup, flaxseed, peanut butter, vanilla and 2 sliced bananas. Stir well to combine.
  5. Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices. 
  6. Bake for 30 to 35 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle additional peanut butter on top and serve with fresh banana slices.
