Peanut Butter Banana Muffins
Delicious peanut butter baked with ripe bananas lightened up with Greek yogurt. Delicious for brunch or an afternoon snack.

Ingredients
- 1 1/2 about 3 large bananas cups ripe banana, mashed
- 1/3 cup plain greek yogurt 0% fat
- 1/3 cup peanut butter creamy
- 3 tablespoons butter melted and cooled
- 2 large eggs
- 1/2 cup brown sugar
- 1/4 cup coconut palm sugar or granulated sugar
- 1 cup all-purpose flour
- 1/2 cup white whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- 1/4 cup dry roasted peanuts chopped
Instructions
- Preheat oven to 350°F. Line a muffin pan with liners or grease a loaf pan(s).
- In a large bowl beat together bananas, yogurt, peanut butter, melted butter and eggs until well combined. Beat in sugars.
- In a medium bowl whisk together flours, baking soda, salt, cinnamon and allspice. Add to banana mixture and beat until blended.
- Pour into prepared pans and sprinkle with chopped peanuts. Bake.
- Muffins will take 20-25 minutes, mini loafs 25-30 and large loaf 60 minutes. Test by inserting a toothpick in the center. It's done if it comes out clean.
