Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup peanut butter
  • 2 ripe bananas , mashed
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1/2 cup brown sugar , packed
  • 2 tablespoons honey
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract

  1. Preheat the oven to 375 degrees and line a 12-cup muffin tray with paper liner cups.
  2. In a large bowl whisk together the flour, baking powder, cinnamon, nutmeg, and salt until well combined (this will help the muffins be tender).
  3. In a medium bowl whisk together the peanut butter, banana, vegetable oil, eggs, brown sugar, honey, milk, and vanilla extract.
  4. Add the wet mixture to the flour mixture slowly while whisking.
  5. Whisk until the mixture is just barely combined (do not over-mix).
  6. Fill the muffin liners 3/4 full and bake for 20-24 minutes until a toothpick comes out clean.
  7. Let cool for five minutes before removing muffins from the muffin tin.
