Peanut Butter Bliss Balls

These peanut butter bliss balls are a FANTASTIC make-ahead breakfast for a filling and satisfying start to the day.

Ingredients

  • 15 ounce can white kidney beans approx. 1.5 cups
  • ½ cup peanut butter the kind with JUST peanuts
  • ½ cup maple syrup
  • ¾ cup rolled oats
  • ¾-1 cup almond flour
Optional
  • ¼ cup dark chocolate chips

  1. Drain and rinse your can of beans and add them to your food processor, along with all remaining ingredients, starting with ¾ cup of almond flour. Process until fully combined, scraping down the sides as needed.
  2. Check the consistency of your mixture, if it feels too soft or too sticky to shape into balls, add the remaining ¼ cup of almond flour, and pulse to combine.
  3. Use a small cookie scoop or tablespoon to scoop the mixture and roll it into a half-inch ball. Place it on a sheet of parchment paper or plate and repeat with the remaining peanut butter mixture. You should get around 22 bliss balls.

Notes

  •  
  • Store the balls at room temperature for 2-3 days, in the fridge for up to 5 days, or airtight in the freezer for up to 3 months.
  • Use natural peanut butter where the only ingredient is peanuts, without added sugar or salt.
  • If your nut butter is very drippy, you may need extra almond flour to get the consistency firm enough to roll.
  • Roll your balls using damp hands to prevent the mixture from sticking to your hands and fingers.
