  • chocolate chips or candy melts for dipping

Instructions

    Cup of Yum
  1. Mix graham cracker, powdered sugar and coconut together.
  2. Add butter, vanilla, and peanut butter and stir until completely combined. Roll or press mixture into 1-inch balls. Chill in the fridge for 30 minutes.
  3. Melt chocolate in the microwave or in a double boiler. Dip each peanut butter ball in chocolate, either halfway or fully. Shake off any excess chocolate. Place on a prepared baking sheet or cookie sheet.
  4. Enjoy once chocolate is fully hardened.

Notes

  • Nutrition facts do not include dipping chocolate.
  • Store leftovers in an airtight container on the counter at room temperature or in the refrigerator. You can even freeze them. Place them on a baking sheet covered with wax paper or parchment paper and freeze for 1 hour. Then transfer to an airtight container and store in the freezer.
  • I love eating the peanut butter mixture by itself - its like cookie dough but with no risk of salmonella!
