Ingredients
- ¾ cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon kosher salt
- 2 tablespoons unsalted butter melted and slightly cooled
- 2 tablespoons Peanut Butter Frosting
- ¾ cup milk (dairy or non-dairy OK)
- 1 teaspoon pure vanilla extract
- 1 egg cracked and beaten
- 11 oz. Peanut Butter Frosting
- dark chocolate chips for decoration
- powdered sugar for decoration
Instructions
- Measure the flour, cocoa powder, sugar, baking powder, baking soda and salt into a large bowl. Whisk until combined, then set aside.
- In a microwave-safe glass bowl, measure out the unsalted butter. Heat until melted, then add 2 tablespoons of the Peanut Butter Frosting. Whisk the ingredients together.
- Add the milk and vanilla extract, and whisk.
- Pour in the egg, and stir until combined.
- Pour the wet ingredients into the dry ingredients, and stir until just combined. (Some lumps are OK in this batter, as overmixing it will make for less fluffy waffles.)
- Let the waffle batter sit for 5-10 minutes.
- While the batter rests, heat your waffle iron to the manufacturer’s instructions.
- Once the waffle iron is heated, spray with nonstick cooking spray, then pour in ¼ cup to ⅓ cup of the batter.
- Cook the waffles until risen and fluffy, then remove from the waffle iron. Let cool on a metal cooling rack while you make the other waffles.
- Once the waffles are all made, let them sit for an additional 15-30 minutes, or until they are at room temperature.
- When the waffles have cooled, cut the waffles into quarters along the seams.
- Spread the Peanut Butter Frosting over the waffles, letting the frosting coat the surface, then sandwich 2-4 quarters together into a waffle sandwich.
- Repeat until all waffle quarters have been used, then sprinkle with chocolate chips and powdered sugar.
- Enjoy immediately.

Notes
- If made in advance, store in the refrigerator until time to eat. We stacked ours on a plate, then let them come down to room temperature before enjoying later.
