Ingredients

  • ¾ cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 2 tablespoons unsalted butter melted and slightly cooled
  • 2 tablespoons Peanut Butter Frosting
  • ¾ cup milk (dairy or non-dairy OK)
  • 1 teaspoon pure vanilla extract
  • 1 egg cracked and beaten
  • 11 oz. Peanut Butter Frosting
  • dark chocolate chips for decoration
  • powdered sugar for decoration

Instructions

    Cup of Yum
  1. Measure the flour, cocoa powder, sugar, baking powder, baking soda and salt into a large bowl. Whisk until combined, then set aside.
  2. In a microwave-safe glass bowl, measure out the unsalted butter. Heat until melted, then add 2 tablespoons of the Peanut Butter Frosting. Whisk the ingredients together.
  3. Add the milk and vanilla extract, and whisk.
  4. Pour in the egg, and stir until combined.
  5. Pour the wet ingredients into the dry ingredients, and stir until just combined. (Some lumps are OK in this batter, as overmixing it will make for less fluffy waffles.)
  6. Let the waffle batter sit for 5-10 minutes.
  7. While the batter rests, heat your waffle iron to the manufacturer’s instructions.
  8. Once the waffle iron is heated, spray with nonstick cooking spray, then pour in ¼ cup to ⅓ cup of the batter.
  9. Cook the waffles until risen and fluffy, then remove from the waffle iron. Let cool on a metal cooling rack while you make the other waffles.
  10. Once the waffles are all made, let them sit for an additional 15-30 minutes, or until they are at room temperature.
  11. When the waffles have cooled, cut the waffles into quarters along the seams.
  12. Spread the Peanut Butter Frosting over the waffles, letting the frosting coat the surface, then sandwich 2-4 quarters together into a waffle sandwich.
  13. Repeat until all waffle quarters have been used, then sprinkle with chocolate chips and powdered sugar.
  14. Enjoy immediately.

Notes

  • If made in advance, store in the refrigerator until time to eat. We stacked ours on a plate, then let them come down to room temperature before enjoying later.
