Peanut Butter Energy Balls Recipe

Peanut Butter Energy Balls are no-bake, portable snacks made by mixing rolled oats, natural peanut butter, nuts, sunflower seeds, coconut, mini chocolate chips, honey, chia seeds, and chopped dates. The mixture is chilled briefly to firm up, then rolled into small balls that offer chewy and crunchy textures with a balance of nutty, sweet, and slightly fruity elements. They provide a handy energy boost and convenient grab-and-go option for snacking or light nourishment.

Description

This Peanut Butter Energy Balls recipe blends rolled oats, natural peanut butter, chopped nuts, toasted sunflower seeds, unsweetened coconut, mini chocolate chips, honey, chia seeds, and finely chopped dates to create bite-sized snack balls. These ingredients combine to create a mix of chewy textures from the oats and dates, crunch from the nuts and seeds, and bursts of sweetness from the chocolate chips and honey.

The mixture is chilled for about 15 minutes to make it easier to roll into uniform balls. This no-bake preparation results in energy-dense bites that are convenient for quick snacking without additional cooking or baking.

These energy balls work well as a snack between meals, a pre- or post-workout boost, or packed for lunchboxes. They store well in the refrigerator and can be frozen to maintain freshness beyond a week.

Ingredients

Servings
  • 1 cup rolled oats
  • ¾ cup peanut butter natural
  • cup nuts we like peanuts, chopped
  • ¼ cup sunflower seeds toasted
  • ¼ cup unsweetened coconut
  • ¼ cup mini chocolate chips
  • 2 tablespoons honey
  • 1 tablespoon chia seeds
  • 3 dates finely chopped, pitted

Instructions

  1. Place all the ingredients into a large mixing bowl.
  2. Use a wooden spoon to stir until everything is mixed together well. Put the bowl into the fridge for 15 minutes - this helps make the balls easier to roll.
  3. Use a medium-sized cookie scoop or heaping tablespoon to portion the balls and then roll them into 20 energy balls. Enjoy!

Notes

  • These energy balls store safely for at least one week in the refrigerator.
  • For longer storage, freeze them to keep fresh for several weeks or months.
