Peanut Butter Granola (Vegan, Oil-Free!)

Peanut Butter Granola is a baked oat-based mix combined with almond flour, natural peanut butter, maple syrup, and warm spices like cinnamon and almond extract. The mixture bakes into soft clusters that harden as they cool, providing a textured cereal suitable for breakfast or snacking. The recipe uses no added oil and can be customized with optional dried fruits, nuts, seeds, or chocolate chips after baking.

Ingredients

  • 2 cups rolled oats gluten-free if desired, old-fashioned
  • 1/2 cup almond flour
  • 1/3 cup peanut butter I use natural, creamy
  • 1/3 cup pure maple syrup
  • 1 tsp. vanilla extract pure
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. almond extract (optional, or less)
  • 1/8 tsp. salt
Optional add-ins after baking:
  • dried fruit
  • nuts
  • seeds
  • coconut flakes
  • chocolate chips vegan

Instructions

  1. Preheat oven to 325°F (165°C). Place parchment paper (or Silpat) on a baking sheet. Set aside.
  2. In a medium saucepan over medium-low heat, add peanut butter and maple syrup. Heat for about 4-5 minutes, stirring occasionally.
  3. When melted and combined, remove from heat. Add vanilla, almond extract (if using), cinnamon, and salt. Stir.
  4. Then add oats and almond flour. Stir well to thoroughly combine.
  5. Add oat mixture to lined baking sheet and slightly spread out. (It doesn’t have to be completely spread out – keeping some together will create clusters.)
  6. Bake for 10 minutes, stir, then bake for 10 more minutes. Remove and let cool.*

Notes

  • The granola is soft when fresh from the oven but firms as it cools, achieving cluster texture.
  • Allow it to cool completely before storing in an airtight container to maintain texture and freshness.
  • Enjoy as a breakfast cereal with milk, a snack, dessert topping, or stirred into yogurt.
  • Store in the refrigerator or at room temperature and consume within 5 to 7 days for best quality.
