Peanut Butter Haystacks

I used to make these Peanut Butter Haystacks as a child. They are creamy peanut butter and butterscotch covered chow mein noodle clusters. These easy no-bake treats can be transformed into little monsters by adding some edible sugar eyes. Adapt them by using any cereal you like.

Ingredients

  • 1 1 cup Nestle butterscotch chips
  • ½ ½ cup creamy peanut butter (use crunchy if you like nuts)
  • 5 5 ounces crispy chow mein noodles (1 ½ cups)
  • 1/2 1/2 cup salted peanuts (optional)

  1. Line a baking sheet with parchment paper.
  2. In a large microwave safe bowl, add the butterscotch chips and peanut butter. Melt in 30 second increments, stirring in between until smooth and the chips are completely melted.
  3. Add the chow mein noodles and peanuts if using, stirring quickly to coat.
  4. Drop by the spoonfuls onto the parchment paper. I like to use little tongs because the mixture is wet. Let them set up. You can speed this up by placing in the fridge. Store in an airtight container at room temperature.
