Peanut Butter Mousse

Ingredients
- 6 ounces mascarpone cheese
- ⅔ cup heavy whipping cream
- ⅓ cup Crazy Richard’s Peanut Butter (creamy) or other sugar-free peanut butter
- ⅓ cup Monkfruit/Allulose powdered
- 1 teaspoon vanilla extract
Instructions
- Add the heavy cream to a mixing bowl and whip using a hand mixer, until you have stiff peaks, then set aside.
- In another bowl, add in the remaining ingredients and mix until well combined.
- Fold in the whipped cream in 3 additions and keep folding until you have no streaks remaining.
- Chill in the fridge for at least 20 minutes and serve.
- Optional: Top with a drizzle of peanut butter, chopped peanuts and/or grated sugar-free chocolate.

Notes
- If you can't find mascarpone cheese, you can substitute with cream cheese, just be sure to adjust your macros accordingly.
- If you don't have monkfruit/allulose blend on hand, you can substitute with Swerve confectioners.
