Peanut Butter Oat Bites

Healthy and delicious peanut butter bites that are gluten free, refined sugar free, and pack in the protein. So delicious!

Ingredients

  • 2/3 cup creamy peanut butter
  • 1 cup old fashioned or rolled oats
  • 1/2 cup flaxseed meal (about 1/4 cup of flaxseeds before grinding)
  • 2-3 tablespoon honey
  • 1/2 cup semi sweet chocolate chips, regular sized or mini
  • 2-3 tablespoon shredded coconut (optional)

Instructions

    Cup of Yum
  1. Combine all ingredients in a medium bowl. Stir well to combine.
  2. Place in the refrigerator for 15-30 minutes so they are easier to roll.
  3. Roll into 12-14 small balls and store in fridge for up to one week. Enjoy!
