Peanut Butter Rice Krispie Treats

Ingredients
- ¼ cup unsalted butter
- 16 oz mini marshmallows divided
- ½ cup creamy peanut butter
- 6 cups Rice Krispies cereal
Instructions
- In a large pot, melt butter over medium heat. Add all but one cup of the mini marshmallows, turn heat to low, and continue cooking and stirring until marshmallows are melted.
- Remove from heat and stir in peanut butter. Add in rice krispies cereal and stir until blended. Fold in remaining mini marshmallows.
- Pour mixture into a parchment paper lined 9-inch square baking dish. DO NOT press them in tightly. Allow to set one hour. Cut and enjoy.

Notes
- Using parchment paper is a great way to remove your krispie treats from the pan.
- Use fresh marshmallows. Don’t think that any marshmallows will work, especially the hard ones in the back of your pantry. USE FRESH.
- Choose a regular brand of creamy peanut butter, NOT a natural version. The natural peanut butters tend to have too much oil.
- DO NOT (I repeat) DO NOT press these bars into your pan firmly. Using your fingertips, GENTLY press them in just until they are spread out. The harder you pack them in, the harder they are when it’s time to eat them!
- The trick to pressing them in your pan without sticking to your hands is to run your fingers in water, shake off the excess, and press. Voila. No sticking!
