Peanut Butter Stuffed Dates
Two-ingredient peanut butter stuffed dates are a powerhouse of nutrients and natural energy. Perfect for potlucks, parties, or a simple after-school snack.

Ingredients
- ½ lb pitted dried dates (around 26 dates; see Note 1)
- 5 tbsp Homemade Peanut Butter
- flaky salt (*optional)
- Toasted coconut flakes (*optional)
Instructions
- Find the seam in each pitted date and pry it open to crack the date open at the seam.
- Using a spoon, fill the open date with peanut butter.
- Optional: Sprinkle a pinch of salt, and shredded coconut or toasted coconut flakes over each stuffed date.

Notes
- Pitted vs Whole Dates: I prefer to use pre-pitted dates to save time. If using whole dates, slice each date lengthwise halfway through (don’t cut it entirely in half) and remove the pit before starting the recipe.
