Peanut & sesame brittle (花生芝麻糖)
This peanut and sesame brittle recipe combines toasted peanuts and sesame seeds with a butter and caramelized sugar base to form a crisp and crunchy sweet treat. The mixture is pressed flat and cut into pieces before cooling completely. Butter adds richness, while the toasts of nuts and seeds contribute nutty flavors and varied texture throughout the brittle.
Ingredients
- 150 g peanuts 1 cup, skinless
- 150 g white sesame seeds 1 cup, or black sesame seeds
- 30 g butter 2 tbsp
- 250 g sugar 1 ¼ cups
Instructions
- Break peanuts into halves with your hands. Toast in a frying pan over a low heat until they become lightly brown. Coarsely chop them into smaller pieces (or crush them with a rolling pin).
- Toast sesame seeds the same way.
- In a non-stick pan over a low heat, melt butter then add sugar. Stir from time to time. Cook until it turns into a brown, smooth and sticky consistency (see note 1).
- Pour in peanuts and sesame seeds. Stir quickly until well combined. Turn off the heat.
- Put the mixture onto a sheet of baking paper placed over a chopping board. Put another sheet over (See note 2). Press the mixture into a flat block with the rolling pin. Cut the block into desired size and shape (See note 3).
- When completely cool, store brittle in an airtight container placed in a dry, dark place. Consume with 1 month.
Notes
- Prepare baking papers in advance as the caramel mixture hardens rapidly once off heat.
- Cook sugar and butter mixture slowly to avoid burning and achieve smooth caramel consistency.
- Cut brittle into pieces while still warm for clean edges and easier separation.
- Feel free to substitute or add other nuts like walnuts, cashews, or hazelnuts, ensuring they are toasted and chopped before mixing.
