Description

Ingredients

  • 150 g peanuts 1 cup, skinless
  • 150 g white sesame seeds 1 cup, or black sesame seeds
  • 30 g butter 2 tbsp
  • 250 g sugar 1 ¼ cups

Instructions

  1. Break peanuts into halves with your hands. Toast in a frying pan over a low heat until they become lightly brown. Coarsely chop them into smaller pieces (or crush them with a rolling pin). 
  2. Toast sesame seeds the same way.
  3. In a non-stick pan over a low heat, melt butter then add sugar. Stir from time to time. Cook until it turns into a brown, smooth and sticky consistency (see note 1).
  4. Pour in peanuts and sesame seeds. Stir quickly until well combined. Turn off the heat.
  5. Put the mixture onto a sheet of baking paper placed over a chopping board. Put another sheet over (See note 2). Press the mixture into a flat block with the rolling pin. Cut the block into desired size and shape (See note 3).
  6. When completely cool, store brittle in an airtight container placed in a dry, dark place. Consume with 1 month.

Notes

  • Prepare baking papers in advance as the caramel mixture hardens rapidly once off heat.
  • Cook sugar and butter mixture slowly to avoid burning and achieve smooth caramel consistency.
  • Cut brittle into pieces while still warm for clean edges and easier separation.
  • Feel free to substitute or add other nuts like walnuts, cashews, or hazelnuts, ensuring they are toasted and chopped before mixing.
