Pear Bread

Ingredients

  • 3 large eggs , room temperature
  • 3/4 cup vegetable oil
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 D'Anjou pears , peeled, cored and chopped
  • 1 tablespoon lemon juice
  • 1/2 cup sliced almonds

  1. Preheat the oven to 350 degrees and butter and flour an 8x4 inch loaf pan.
  2. In a large mixing bowl whisk together eggs, oil, sugar and vanilla extract until well blended.
  3. In a separate bowl sift together the flour, baking powder, cinnamon, baking soda and salt.
  4. Add flour mixture to the wet ingredients and whisk until just combined.
  5. Toss pears with lemon juice.
  6. Fold pears and almonds in by hand until just combined and pour into the pan and bake for 55-60 minutes until a toothpick comes out clean.
  7. Note: If you'd like, you can cut a couple very thin slices of pear before chopping. Place them on the batter before baking.
