Ingredients
- 200 g peas 1 cup, frozen or fresh
- 1 teaspoon mint leaf chopped, fresh
- ½ teaspoon lime juice or lemon juice, fresh
- 3 radish sliced
- bread toasted, to serve
- salt to taste
- black pepper to taste
Instructions
- Boil the peas for a few minutes until cooked.
- Drain and lightly mash with a fork. Add the mint and lime juice and mash to combine.
- Spread over toast and top with radish slices and a little salt and pepper.
