Peas on toast with sesame seeds and pistachios

Ingredients
- 125 ml (0.5 cup) of water
- 250 g (8.8oz) frozen peas
- Small handful of roughly chopped parsley
- 1 tbsp olive oil
- 1 tbsp lemon juice or to taste
- salt
- 4 thick slices of bread toasted
- 3 tbsp toasted sesame seeds
- 3 tbsp chopped pistachio nuts
- Extras for topping tomatoes and cress olive oil for drizzling
Instructions
Make the pea paste
- Add the water to a pot along with the peas and cook for about 2.5 min until the peas are soft.
- Reserve 1 tbps of the cooking water, discard the rest and let the peas cool slightly.
- Transfer the peas into a food processor along with the reserved liquid and the parsley and whiz into a rough paste.
- Transfer the pea paste into a bowl and mix in the olive oil and lemon juice and season to taste.
Make the peas on toast:
- Assemble the peas on toast, starting with the bread, then the peas paste, then the sesame seeds and nuts, any extras and a drizzle of olive oil.
