Pebre

Pebre is a Chilean condiment prepared with cilantro, chopped onion, olive oil, garlic and spicy aji pepper paste, as well as chopped tomatoes and diced green hot peppers.

Ingredients

  • 2 tomatoes
  • 1 medium onion
  • 4 tablespoons chopped cilantro
  • 1 green chili , finely chopped
  • ½ tablespoon salt
  • 3 tablespoons red wine vinegar
  • 1 tablespoon oil

Instructions

  1. Add the tomatoes to a pot of boiling water for 1 minute.
  2. Remove them and then put them in cold water. Remove the skin.
  3. Dice the onion. Place the onion in a medium size bowl and cover with boiling water. Let soak for a minute. Drain, and rinse well with cold water.
  4. Mix the tomatoes, onion, cilantro, chili, salt, red wine vinegar, and oil.
