Pecan Pie Cookies

With a flaky crust and sweet nutty pecan filling Pecan Pie Cookies are like tiny pies, but bite-sized and easy to make!

Ingredients

Crust:
  • ½ cup butter
  • 1 cup flour
  • 3 ounces cream cheese
Filling:
  • 1 egg
  • ¾ cup brown sugar
  • 1 cup Chopped Pecans
  • 1 Tablespoon butter melted
  • ¼ teaspoon vanilla

Instructions

    Cup of Yum
  1. Mix crust ingredients and shape into 24 balls. Press each into the cup of a mini-muffin pan, working upwards to form a cup.
  2. Mix filling ingredients. Put about 1 teaspoon into each cup, filling about ¾ full.
  3. Bake at 375 for 20-25 minutes or until edge is slightly browned. Sprinkle with powdered sugar.
