Pecan Pie Overnight Oats

Report
Pecan Pie Overnight Oats combine rolled oats with Greek yogurt, milk, protein powder, diced apples, and warm spices for a textured, creamy breakfast base. The pecan caramel topping made from almond butter, maple syrup, coconut oil, vanilla, and crushed pecans forms a hardened layer when chilled, offering a contrasting crunch. This layered preparation creates a satisfying blend of flavors and textures reminiscent of pecan pie, ready after several hours of refrigeration.

Description

The recipe starts by preparing a pecan caramel sauce from melted coconut oil and maple syrup, whisked together with almond butter, vanilla extract, and salt before folding in crushed pecans. Separately, rolled oats are combined with protein powder, milk, Greek yogurt, chia seeds, vanilla, cinnamon, diced apples, additional crushed pecans, and a pinch of salt. The oat mixture is stirred well, then diced apples are folded in. This mixture is portioned into jars or containers, topped with the pecan caramel sauce spread evenly over the top. After refrigerating for at least two hours or overnight, the caramel topping hardens to a 'magic shell'-like finish.

This dish offers a nutritious and flavorful start to the day, with textures ranging from creamy oats to crunchy pecan topping. It is well suited for meal prep and can be stored in the refrigerator for up to three days, though extended storage may result in a mushier texture.

For even distribution of caramel flavor, layering the pecan caramel between layers of oats can ensure pecans and sweetness in every bite.

Ingredients

Servings

Pecan Caramel Topping

  • ½ cup pecans crushed
  • 3 tbsp almond butter
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil
  • ½ tsp vanilla extract
  • pinch salt

Oat mixture

  • 1 ⅓ cup rolled oats
  • 2 coops protein powder optional, vanilla
  • 1 ⅓ cup milk
  • cup Greek yogurt vanilla flavor
  • ½ tbsp chia seeds
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 apple diced
  • 2 tbsp pecans crushed
  • pinch salt

Instructions

  1. Make the Pecan Pie Caramel Mixture first. Melt the coconut oil and maple syrup together for 45 seconds. Whisk together.
  2. Whisk in almond butter, pinch of salt, and vanilla extract until it’s fully mixed and very smooth. Fold in chopped/crushed pecans and then set aside while making the oats.
  3. In a large mixing bowl, add all of the ingredients to the bowl besides the diced apple. Stir together until well combined.
  4. Fold in the diced apples and stir again.
  5. Pour the pecan caramel mixture over the top of the bowl and spread so it covers the whole top. If making for meal prep, split the oat mixture between four mason jars and then pour the caramel pecan sauce into each jar.
  6. Refrigerate for at least 2 hours or overnight and enjoy!

Notes

  • The pecan caramel topping hardens in the refrigerator, creating a crisp layer similar to a "magic shell."
  • For even distribution of caramel and pecans, layer the pecan caramel mixture throughout the oat jars, not just on top.
  • Store the assembled oats in airtight containers in the refrigerator and consume within three days for best texture and flavor.
  • Extended storage beyond three days can result in a mushier texture due to the oats absorbing moisture over time.
