Penne alla Vodka

Ingredients
- ¾ lb pasta, dry
- 1 Tbsp extra virgin olive oil
- 2 oz pancetta or bacon, cut into small pieces
- 4 garlic cloves, minced
- ½ c vodka
- 28 oz can crushed tomatoes
- ¾ tsp salt
- ¼ tsp pepper
- ½ c heavy cream
- 1 Tbsp fresh basil, chopped (or 1 tsp dry)
- 1 Tbsp fresh parsley, chopped (or 1 tsp dry)
Instructions
- In a large pot, cook penne according to its package instructions. Drain and set aside when done.
- Heat the oil in a deep sauté pan. Add the pancetta (or bacon) and sauté for 2 minutes. Add the minced garlic. Sauté for 1 minutes.
- Add the vodka and stir well, letting it simmer for 1 minute.
- Add the crushed tomatoes, salt, and pepper. Bring the mixture to a light simmer and simmer over medium low heat, uncovered, for 5-7 minutes, to thicken the sauce slightly.
- Add the cream and heat the sauce just until it begins to simmer. Remove the sauce from the heat.
- Pour the sauce over the cooked and drained pasta. Top with fresh parsley and basil just before serving.
