Peppermint Bark Brownies

Peppermint Bark Chocolate Brownies. Decadent homemade chocolate brownies with white chocolate peppermint bark. The perfect Christmas holiday brownie.

Ingredients

  • 1/2 cup butter (softened)
  • 1 cup sugar (this recipe works with 3/4 cup of sugar as well)
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 1/4 cup cake flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1 1/2 cups peppermint bark (divided)
  • 1/4 teaspoon peppermint extract (optional)

Instructions

  1. Preheat oven to 350 degrees. In a large mixing bowl, cream together butter, sugar, and brown sugar for 3-4 minutes or until light and fluffy. Add eggs one at a time, mixing well after each addition. Add vanilla. If using peppermint extract, add it now. 
  2. Stir in flour, cake flour, cocoa, and salt until mixed together.
  3. Fold in chocolate chips and 3/4 cup of peppermint bark, reserving the rest for sprinkling on the top. 
  4. Pour into an 8 x 8 pan and spread evenly. Sprinkle remaining 3/4 cup of peppermint bark over the top of brownies. Bake for 26-36 minutes.
