Peppermint Melting Moments Christmas Cookies

Peppermint Melting Moments Christmas Cookies are delicate, soft cookies made from a buttery dough flavored with peppermint extract, combined with powdered sugar and corn starch to create a tender texture that melts in the mouth. These cookies are chilled before baking to hold their shape and are baked until edges turn lightly golden. After cooling, they are topped with a creamy peppermint buttercream frosting and sprinkled with crushed peppermint candies for a festive finish.

Ingredients

MELTING MOMENTS COOKIES

  • ½ teaspoon peppermint extract
  • ½ cup powdered sugar icing
  • 1 cup all-purpose flour
  • ½ cup corn starch
  • 1 pinch salt if you use unsalted butter then add ¼ teaspoon of salt
PEPPERMINT BUTTERCREAM FROSTING

  • ¼ cup heavy cream also whole cream, whipping cream
  • 2 cups powdered sugar sifted, icing
  • ½ teaspoon peppermint extract
  • 2-3 tablespoons peppermint candies crushed, or candy cane

Instructions

MELTING MOMENT COOKIES
    Cup of Yum
  1. In a large bowl cream butter and peppermint extract until fluffy. Sift the dry ingredients (remaining ingredients) directly into bowl and mix until combined.
  2. Move to a lightly floured flat surface and gently knead together, form into a ball, wrap in plastic and refrigerate one hour.
  3. Pre-heat oven to 350F (180C). Line cookie sheets with parchment paper.
  4. Remove dough from the fridge and roll into golf ball size balls, place on prepared cookie sheets about 1½ inches apart. Lightly flatten with a fork or a flat bottomed glass,(dip in flour first so the dough doesn't stick). Refrigerate for 15 minutes then bake for approximately 15-18 minutes or until the edges are lightly golden (do not over bake).
  5. Let cool completely before frosting and sprinkling with crushed peppermint candies. Enjoy!
PEPPERMINT BUTTERCREAM FROSTING
  1. Beat butter, cream, icing sugar and peppermint extract until creamy. (if too thick add a little cream at a time, if too thin add more icing sugar).

Notes

  • Store Melting Moment Cookies at room temperature in a single layer inside an airtight container to keep their texture for up to 7 days.
  • You can freeze unbaked cookie balls on a tray before transferring to a sealed container, or freeze baked cookies separated by parchment paper; freeze without frosting and frost after thawing for best results.
  • Frozen cookies (baked or unbaked) will maintain quality for up to 3 months.
