Description
The cookies use a simple dough of softened butter, peppermint extract, powdered sugar, flour, corn starch, and a pinch of salt, kneaded gently and chilled to maintain shape when baked at 180°C. Their texture is soft and crumbly, characteristic of melting moments. The peppermint buttercream, made by beating together butter, heavy cream, sifted powdered sugar, and peppermint extract, adds a smooth and rich contrast.
The frosting is applied once the cookies have cooled completely, then sprinkled with crushed peppermint candies to add a crunchy texture and a burst of minty flavor that complements the gentle cookie base. These cookies make a seasonal treat suitable for holiday gatherings or gifting.
For storage, cookies keep well up to a week at room temperature in a single layer within an airtight container. They can also be frozen unbaked or baked, with frosting and decoration done after thawing, allowing preparation in advance.
Ingredients
MELTING MOMENTS COOKIES
- ¾ cup butter (softened)
- ½ teaspoon peppermint extract
- ½ cup powdered sugar icing
- 1 cup all-purpose flour
- ½ cup corn starch
- 1 pinch salt if you use unsalted butter then add ¼ teaspoon of salt
PEPPERMINT BUTTERCREAM FROSTING
- ¼ cup butter (softened)
- ¼ cup heavy cream also whole cream, whipping cream
- 2 cups powdered sugar sifted, icing
- ½ teaspoon peppermint extract
- 2-3 tablespoons peppermint candies crushed, or candy cane
Instructions
MELTING MOMENT COOKIES
- In a large bowl cream butter and peppermint extract until fluffy. Sift the dry ingredients (remaining ingredients) directly into bowl and mix until combined.
- Move to a lightly floured flat surface and gently knead together, form into a ball, wrap in plastic and refrigerate one hour.
- Pre-heat oven to 350F (180C). Line cookie sheets with parchment paper.
- Remove dough from the fridge and roll into golf ball size balls, place on prepared cookie sheets about 1½ inches apart. Lightly flatten with a fork or a flat bottomed glass,(dip in flour first so the dough doesn't stick). Refrigerate for 15 minutes then bake for approximately 15-18 minutes or until the edges are lightly golden (do not over bake).
- Let cool completely before frosting and sprinkling with crushed peppermint candies. Enjoy!
PEPPERMINT BUTTERCREAM FROSTING
- Beat butter, cream, icing sugar and peppermint extract until creamy. (if too thick add a little cream at a time, if too thin add more icing sugar).
Notes
- Store Melting Moment Cookies at room temperature in a single layer inside an airtight container to keep their texture for up to 7 days.
- You can freeze unbaked cookie balls on a tray before transferring to a sealed container, or freeze baked cookies separated by parchment paper; freeze without frosting and frost after thawing for best results.
- Frozen cookies (baked or unbaked) will maintain quality for up to 3 months.
