Peppermint Patty Cupcakes with Peppermint Buttercream Icing

Chocolate cupcakes with a York peppermint patty baked into the middle, topped with Peppermint Buttercream icing.

Ingredients

  • 15 ounces box of chocolate cake mix OR your own homemade recipe
Oil/egg/water according to your boxed cake mix instructions
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 1/4 cups water
  • 24 York Peppermint patties to put on each cupcake

Instructions

    Cup of Yum
  1. Prepare the cake according to the instructions. 
  2. Line muffin tins with cupcake liners. 
  3. Fill liners two-thirds full, then place an unwrapped peppermint patty on top. 
  4. Place enough batter on top to cover the peppermint patty. 
  5. Bake in a 350 degree oven for 17-10 minutes, until the top of the cupcakes spring back when touched or a tester inserted into the middle comes out clean. 
  6. Cool on racks. 
  7. Frost with my Peppermint Buttercream Icing. Serve and enjoy!
