PEPPERMINT RED VELVET BLOSSOM COOKIES

Ingredients

For the cookie dough:
  • 1 ½ cups all-purpose flour
  • 2 tablespoon unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon Red food coloring
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
For the topping:
  • 24 chocolate peppermint kisses or regular chocolate kisses
  • powdered sugar for dusting optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, red food coloring, vanilla extract, and peppermint extract, and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
  7. Once chilled, roll the dough into 1-inch balls and place them onto the prepared baking sheet.
  8. Bake the cookies for 10-12 minutes, or until they are set but slightly soft in the center.
  9. Remove the cookies from the oven and immediately press a chocolate peppermint kiss into the center of each cookie.
  10. Allow the cookies to cool completely on a wire rack. Once cool, dust with powdered sugar if desired.
  11. Serve and enjoy your festive peppermint red velvet cookies!

Notes

  • You can use regular chocolate kisses if you prefer a less minty flavor, or opt for milk or dark chocolate kisses for variation.
