- 24 chocolate peppermint kisses or regular chocolate kisses

Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg, red food coloring, vanilla extract, and peppermint extract, and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
- Once chilled, roll the dough into 1-inch balls and place them onto the prepared baking sheet.
- Bake the cookies for 10-12 minutes, or until they are set but slightly soft in the center.
- Remove the cookies from the oven and immediately press a chocolate peppermint kiss into the center of each cookie.
